冬、白い毛になったら
それは 'HARE' らしい、が
見つけたのは雪の足跡

USAGI in Japanese refers to both rabbits and hares.
"Rabbit's fur coat remains its color year-round,
while hares change color from grayish brown
in summer to white in winter."
I saw 'usagi' like this one in the garden in warm season.
In winter i saw only footprints on the snow. I wonder.

Snufkin in the Moomin stories:
Tove Jansson was born into a Swedish minority in Finland,

You can eat a lot of fresh vegetables
with deep-fried sanma marinated in
sesame oil, black vinegar, pepper,
tobanjan (Chinese spicy broad bean paste),
soy sauce, and yuzu.

熱い天板に、成形生地のせ
210℃で焼く、なんて簡単
薪ストーブじゃぁなかなか
ぷーっと水吹いて焼く20分

強力粉 bread flour　200g
ライ麦 rye flour　 50g
イースト yeast 3g
塩 salt 5g
甜菜糖 beet sugar 7g
よもぎ mugwort (春に摘んでひと茹で冷凍)
walnut/raisin（生地2分割）

板皿：「空をたたんで」コバルト3%釉
slab-made plate：cobalt glaze

My oil free rye bread turned out perfectly with so much flavour.
I misted the dough with some water before baking,
using 'my mouth' as a spray!!

水色の石砕いても
水色にはならない
むしろわずかな鉄
石英の粒含んでて
かなり貫入はいる

It seems it can be used
as a clear crackle glaze.
The greenish brown shows
it contains some iron oxide.

I went so far as to use some country bread
to wipe up and eat every last bit of the sauce.

雨、が、みぞれ、になり
べた雪が、さらさら雪に

突風、粉砂糖雪さらうと
落ち葉の大地はふかふか
道路、ぎんぎんに凍って

Occasional gusts were producing
blowing and drifting of the powdery snow.
Although the snow was only 5cm deep,
I shoveled the path, for it should turn into ice.
In the early evening I chose Sting's
"Songs from the Labyrinth" with the curtains open.

Wrap two kinds of potatoes and sweet potato
with aluminum foil and put them inside the stove.
On top saute onion and ground pork until tender in iron skillet.
Mash, mix, and then use heart shaped ceramic ring......

夏みかんマーマレード
に比べりゃじつに簡単

オリーブ油+馬鈴薯+キャベツ+練った牛ミンチ
（押し麦水煮+ハーブミックス+パン粉）
を、二度重ね、キャベツで終わり
ニンニク醤油+湯をかけ
たまに耐熱ガラス蓋からのぞき
湯を足し、4時間、ストーブの上

Cooked on top of the wood stove,
the cabbage (+minced beef+potato)
became melt-in- your-mouth tender.
Thank you for the heat, which is slow and gentle.

I like hand-building, so I am

How does it look?

I wanted to use some locally collected clay and sand,
which happened to become figs/whistles.
I am now thinking about rock/clay glazes to be applied.

*蓋茶碗：「身も蓋もあり」
　土に含まれた「黒御影土」と「オリーブホワイト
　マット」と名づけた釉薬反応して淡いピンクになった。蓋も身になる。
　そうそう川喜田半泥子（かわきたはんでいし）の茶わん、白マットにピンク。

Ceramic bowl with lid, which can be used as two cups.
The white matt glaze turned pinkish unexpectedly.
I want something I say hello to on my ceramic piece.

As autumn deepens,
the purple blue has turned to sky blue
and then faded to pale blue.
This morning I woke up at three
and our digital thermometer shows outdoor temperature as minus 4℃.
They must be perfectly freeze dried.

"Me de taberu"=
You first eat with your eyes.
So, use plates that contrast the food color, for instance.
Just keep it in mind that the plate holds food comfortably.

花豆と陶の鞘-Cooked Beans in Ceramic Pod

ひと晩
魔法瓶に乾燥豆/袋半分+湯を充たす
これで「やわらかく」は、なる
一日目
土鍋に移して、薪ストーブにのせる
「やわらかい」が、ふくらむ
二日目
煮汁が少なくなり、きび砂糖+海塩+醤油+黒酢
煮くずれず、ひと粒ひと粒、胸はってエッヘン



長さ30cmほどの豆のサヤ
に、食われた豆と青虫さん

Instead of soaking,
dry beans soften over night
in a thermal pot filled with boiling water.
Empty the pot into a clay pan.
Place it on the wood stove.
One day , and another day.
One bite will tell you slow cooking brings out 'flavor and tenderness'.

森にふっくりと満月
Full moon through the woods

Recipe
牛乳 milk 100cc
玉子 egg 1
豆腐 tofu
ガラスープ（顆粒）chicken stock powder etc.

強火で1分+弱火（蓋に箸はさむ）で15分
Steam 1 minute over high heat.
Turn the heat to low and steam for about 15 more.

さてこいつの種、えっと、どこ？

Animals bury seeds. I do too.
It's fun to wait and see if my seeds might sprout yet.
Some acorns, horse chestnuts, tea, camellia
survive this high elevation and are growing slowly.

ピザに続いて、ライ麦パン焼いた

ガスオーブンやむなく手放し
電気オーブンの軟弱「窯のび」
がまんしてた、が、やっぱ直火
炎立たなくなったの見計らって

I let the fire die down to coals in the stove
and place a rye dough inside of it.
Making bread is an all day affair.
Now I see how much I depend on new technology.
There's no "heat controller."
I just keep watching.

いざっ、火へ、のぞく


イヤー、きてるきてる
縁がふくふくふくれて
こんなカリッはじめて

まだまだ改良の余地あり
も、まずは実験成功？

Why not exploit the heat?
I devised a baking shelf using
kiln bricks and lava plate.
Many hours of preparation and 5 minute baking,
but it was well worth it. The crust was crispier than ever!!

にわかに「国産」「無添加」
だから「安心」だというのか
いいつつ、まんまと思うつぼ

信州の甘めの粗い白味噌
合うんだよね、牛乳と！

Gratin dish：design 'Sanma or Pacific saury' fish bone　8cmx20cm

I knew 'miso', fermented soy bean paste, goes very well with dairy products.
Firstly saute chopped cabbage, sprinkle flour and add milk and water
to make thin white sauce.
Add 'tofu' or soy bean curd, fresh scallop, spinach, shiitake mushroom.
